Booking Availability Helpers

Shared availability status label/variant config and helper functions. Exports `AVAILABILITY_CONFIG` (labels and badge variants per status) and `getAvailabilityLabel(status, spotsLeft?)` for consistent display. Used by AvailabilityBadge and ActivityCard.
